Serve the best Italian ice with these tips for scooping:

- Use a scooper with a release mechanism.

- Start at the tub wall and move the scooper in a circular motion, spiraling toward the center of the tub.
-
- Rotate the tub as you scoop to make it easier to serve.
-
- Always scrape the ices (no dipping), pushing down no more than 1/2 inch at a time.

- As you scoop, always keep the product level in the tub, never leaving product on the walls of the tub.
